Wye Valley Pure Honey Sparkling Mead Review

Wye Valley Pure Honey Sparkling Mead strips the modern session-mead idea back to its essentials: honey, water, yeast and bubbles. Produced by Hive Mind Mead & Brew Co., formerly Wye Valley Meadery, it presents wildflower honey in a light, sparkling 330ml format rather than as a rich, wine-strength drink.

Our verdict: pale, floral and softly sweet, with delicate carbonation that keeps the honey fresh rather than syrupy. It is the clearest introduction to Hive Mind’s sparkling range and an approachable alternative to cider, beer or a simple spritz when you want honey flavour without fruit, spice or hops.

At a glance

Brothers Matt and Kit Newell founded Wye Valley Meadery in 2018 before the business became Hive Mind Mead & Brew Co. Its sparkling range brings mead into the territory of beer, cider and ready-to-drink spritzes through lower alcohol, small-format packaging and carbonation.

Hive Mind currently lists Pure Honey at 3.4% ABV in 330ml cans. The range was previously promoted at 4%, and older bottles or retailer stock may retain the Wye Valley name. Check the label for the strength and packaging of the particular production run you are buying.

Appearance

Pure Honey pours a pale, bright straw yellow: closer to white wine or a light golden cider than the amber colour associated with many traditional meads. In a clear glass it has the sunny appearance that wildflower honey suggests, without looking dense or viscous.

The current producer description calls it lightly carbonated. Fine bubbles give it an active but delicate sparkle, lifting through the drink without creating the forceful fizz of a soft drink. Older bottled releases were described by retailers as bottle-conditioned, but that should not automatically be assumed of the current canned version.

Nose

Wildflower honey is the defining aroma. It is clean and direct, with bright floral blossom and fresh nectar rather than caramel, toast or dark cooked-honey notes.

A subtle grassy freshness can appear behind the flowers, keeping the nose summery and light. There is no fruit, spice or hop addition competing for attention, so this is the most straightforward way to explore the honey character within Hive Mind’s sparkling range.

Taste

The first sip is softly sweet and immediately honeyed. Floral nectar spreads gently across the tongue before the carbonation lightens the middle of the palate. It has enough sweetness to remain unmistakably mead, but not the syrupy weight that newcomers sometimes expect from the category.

Its balance comes from texture rather than an added contrasting flavour. Bubbles provide crispness and keep the honey moving, while the modest alcohol avoids the heat of a stronger honey wine. The result is off-dry to softly sweet, depending on your sensitivity to honey and what you drink alongside it.

The body is light, with a brief tongue-coating roundness rather than true viscosity. There is no fruit acidity, ginger heat or hop bitterness to hide behind, so the clean fermentation and floral honey remain exposed. That simplicity is its strength: this feels like a modern session drink while still making its honey origin obvious.

Finish

The finish is short to medium in length. Carbonation leaves the palate feeling clean, followed by a soft echo of flowers, honey and faint grassy freshness.

Sweetness lingers gently but does not build into a heavy aftertaste. At the current 3.4% strength, the final impression is refreshing and restrained rather than alcoholic or warming.

Is Pure Honey Sparkling Mead traditional mead?

The ingredient list is traditional in the most fundamental sense: honey, water and yeast are the core components of mead. The presentation, however, is deliberately modern. Low alcohol, carbonation and a 330ml can make it suitable for drinking in the same kind of occasion as a craft beer or cider.

That separates it from Wye Valley Meadery Traditional Mead, which is fuller, stronger and intended for slower sipping. Pure Honey is not less authentic because it is light and sparkling; it is a different expression of fermented honey.

What is it made from?

Hive Mind’s current product page declares only water, honey and yeast. The producer describes it as made with 100% honey, meaning honey supplies the fermentable sugar rather than the drink being built on a white-wine base. It also states that there are no refined sugars or artificial ingredients.

The honey is described as wildflower honey, producing the floral and gently grassy character noted in the glass. Anyone with a specific dietary or allergen concern should still check the current can, since packaging is the controlling source for the batch being consumed.

How to serve Pure Honey Sparkling Mead

Serve it well chilled in a wine glass, flute or small beer glass. A flute retains the fine bead, while a wider wine glass gives the floral aroma more room. Pouring it into a glass also makes its pale straw colour and carbonation easier to appreciate.

It can be served over ice for an especially light summer drink, although ice will gradually dilute the honey character. Try it without ice first, then decide whether extra chill or dilution improves it for you.

A 330ml can is a natural single serving. It works as an aperitif, with a light meal, or simply as an alternative when cider seems too fruity and traditional mead too rich.

Food pairings

Keep the food fresh enough to preserve its delicate honey character:

Very spicy food can overwhelm its subtleties. For chilli, aromatic curries or assertive ginger dishes, Wye Valley Honey & Ginger Sparkling Mead provides a stronger flavour bridge.

How it compares with other Wye Valley sparkling meads

Pure Honey is the baseline for understanding the range. Wye Valley Honey & Elderflower Sparkling Mead extends the floral side, while Wye Valley Honey & Rhubarb Sparkling Mead introduces tart fruit and a sharper sweet-sour contrast.

Wye Valley Honey & Ginger Sparkling Mead adds warmth and spice. Wye Valley Honey & Hops Sparkling Mead uses citrus character and bitterness to make the finish feel drier. Choose Pure Honey when you want the most direct honey flavour and the fewest competing ingredients.
